INGREDIENTS

FOR BLANCHING:
1big gobi / cauliflower
½ tsp salt
1 bowl hot water

FOR FRYING:
3 tbsp yogurt, thick
1 tsp red chili powder
1 tsp turmeric
1 tsp garam masala
1 tsp coriander powder
1 tsp ginger garlic paste
1 tsp lemon juice
few curry leaves
2 tbsp coriander/cilantro
1 tsp oil
½ tsp salt
¼ cup corn flour
¼ cup rice flour
oil, for frying

FOR TEMPERING:
3 tsp oil
½ tsp cumin seeds
1 inch ginger, finely chopped
2 clove garlic, finely chopped
2 dried red chili, broken
few curry leaves, chopped
1 tbsp cup yogurt
½ tsp red chili powder
¼ tsp salt
2 tbsp coriander/cilantro

INSTRUCTIONS

1)Start with taking gobi in a large bowl and cut them into small pieces.

2)Next add 1 bowl of hot water and allow to blanch for 5 minutes.

3)Drain off the water.

4)Next add 3 tbsp curd, 1 tsp chili powder, 1 tsp turmeric, 1 tsp garam masala, 1 tsp coriander powder, 1 tsp ginger garlic paste and 1 tsp lemon juice,add few curry leaves, 2 tbsp coriander, 1 tsp oil and ½ tsp salt.

5)mix well and allow to marinate for 30 minutes.

6)now add ¼ cup cornflour and ¼ cup rice flour. mix well to coat the gobi.

7)deep fry in hot oil stirring occasionally.

8)drain off over kitchen paper once gobi turns crispy and golden.

9)Next step is to temper, heat 3 tsp oil and splutter ½ tsp cumin, 1 inch ginger, 2 clove garlic, 2 dried red chili and few curry leaves.

10)On a low and add 1 tbsp curd, ½ tsp chili powder and ¼ tsp salt.

11)saute well until it is well combined well. Now add in fried gobi and mix well coating sauce uniformly. finally, add 2 tbsp coriander and enjoy Gobi 65 recipe | Cauliflower 65 for an evening snack.
