INGREDIENTS

  • 2 medium heads broccoli, cut into florets
  • 1/4 cup mexican style four cheese
  • 1/4 cup finely ground breadcrumbs
  • 1 tsp garlic powder
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Ranch dressing or ketchup, for dipping

INSTRUCTIONS

Preheat the oven to 400°F. Grease a nonstick baking sheet with cooking spray.

Bring a large pot of salted water to a boil. Add the broccoli florets to the water and cook them just until fork tender, about 5 minutes. Thoroughly drain the florets and transfer them to a food processor. Pulse the broccoli for a few seconds just until the it breaks down into small pieces.

Measure out 3 packed cups of the broccoli and add it to a large bowl. Add breadcrumbs, egg ,mexican cheese,garlic powder,salt and Parmesan cheese and mix until thoroughly combined.

Using your hands, portion out about 2 tablespoons of the mixture and mold it into a tater tot shape. Arrange the tots on the prepared baking sheet, spacing them about 1 inch apart.

Bake the tots for about 20 minutes then flip them once and bake them an additional 10 to 15 minutes until crisped. Remove the tots from the oven and serve them with ketchup, Ranch dressing or hummus for dipping.

1 cup all-purpose flour

Vegetable oil, for frying

  1. Make churros: In a large saucepan over medium heat, add water, butter, and sugar. Bring to a boil, then add vanilla. Turn off heat and add flour and salt. Stir until thickened, 30 seconds. Let mixture cool for 10 minutes. 
  2. To cooled mixture, using a hand mixer, beat in eggs one at a time until combined. Transfer mixture to a piping bag fitted with a large open star tip. 
  3. In a large pot over medium heat, add enough oil. Holding the piping bag a few inches above the oil, carefully pipe churros into 6″ long ropes. Use kitchen scissors or hands to cut off dough from piping bag. 
  4. Fry until golden, 4 to 5 minutes, turning as necessary. Fry 3 to 4 churros at a time . Remove churros with a slotted spoon or tongs and immediately roll churros in cinnamon sugar.
  5. Serve churros with chocolate dipping sauce.

Sprinkle crushed candies into cookie centers: Sprinkle the crushed candy into the empty centers of the cookies, filling them to the edges. Try to keep the candy within the centers.You can also add some sprinkles.

Bake: Bake at 375°F for 9 to 10 minutes. The candy should be bubbly and the cookies just barely beginning to brown. You can also bake cookie first for 10 min and then place the candies at the center and bake again until candies melt.

Allow cookies to cool on pans at least 10 minutes; otherwise, the candy centers may separate from the dough. When cookies are completely cooled, remove and store in an airtight container.

Whole spices

  • 2 cloves
  • 2 green cardamom
  • 1 cinnamon stick

Instructions

  1. Start by adding oil in a pan on medium heat.
  2. Next add chopped bhindi and potato.
  3. Saute at medium heat for 10 mins and take it out from pan and set aside.
  4. Heat 1 tablespoon oil in the same pan. Add cloves, green cardamom, cinnamon stick, black cardamom and peppercorns. Saute the whole spices till fragrant.
  5. Then add cumin seeds and fennel seeds,wait until sputters.
  6. Add chopped ginger and broken dried red chili.
  7. Saute till ginger starts turning golden in color.
  8. Add onions and mix. Also add turmeric powder and salt.
  9. Cook for 2-3 minutes or till onions turn translucent.

  2. Heat 1 tablespoon oil in the same pan. Add cloves, green cardamom, cinnamon stick, black cardamom and peppercorns. Saute the whole spices till fragrant

  3. Then add cumin seeds and fennel seeds,wait until sputters.Add chopped ginger and broken dried red chili.

  4. Saute till ginger starts turning golden in color.Add onions and mix. Also add turmeric powder and salt.Cook for 2-3 minutes or till onions turn translucent.

  5. Add the cooked bhindi and mix.Add garam masala, amchur and stir to combine.Lower the flame and cook with closed lid for 20-25 minutes.

  6. Serve bhindi do pyaza with roti or any bread of choice
